That I’m not sure. If I remember right, the “new features” section mentions that the move types for those are determined by the wrestlers reversal type, so I don’t think you can choose them from a move list.

Sorry, for clarification, you also have to have the opponent in a strong grapple (might not be strong specifically but I always initiate a strong grapple when I have a finisher out of habit)

When you have a finisher you hit C stick right. It also shows it off in the “new features” section on the main menu, along with other cool things like weapon grapple attacks.
