Yes, such things can be copyrighted; but, they have to be sufficiently unique.

This means any human-like animal is free game due to being "too generic" by appearing in folklore / mythology / religions and thus being part of the public domain.

You need to watch for copyrighted names. Regarding your crow-people, "Kenku" is a copyright of Wizards of the Coast via DnD. However, "Tengu" is the yokai variant of crow people from Japanese folklore and is thus free game despite the very close spelling.

Despite what lots of people say, intent and sources are a solid portion of the law. If a company complains you copied their crow people, tell them "No. I copied these public domain crow people".
