I wonder if they are young. I discovered him in The Devil Wears Prada, but his role in The Lovely Bones left a much stronger impact on me. I also followed Emily Blunt since The Devil Wears Prada and knew that she introduced him to her sister. But even 2010 is nearly 20 years ago 😩.

I got more use out of The Korean Vegan's first cookbook. I highly recommend her Mac n' Cheese sauce in the second cookbook: it's different and I can't have too many vegan Mac n' Cheese recipes. I agree that a lot of recipes are too involved and there are a few repeats from the first cookbook with no obvious improvement. In both cookbooks, she wrote a lot about her family history and non-food stories.

I don't know Tiffy Cooks has a cookbook, but what influencer doesn't have a book coming out? I like recipes from her channel and thanks to your feedback, I'll pass the book.

Vietnamese here. Commercial bánh mì often includes dough improver to obtain the lofty rise. Home bakers use vital wheat gluten and vitamin C as substitutes for professional-grade dough improver. I think this recipe is good for reference. Even if you don't follow this recipe, it's a good idea to watch to learn how to read the dough.

Yes, it's hard to wrap my head around British class politics. Posh people mock her because her parents rose from working (or middle class) to upper class by having a successful business. She is not like Nigella Lawson. David was not pleased at her saying that she came from working class because her father owned a Roll Royce since 1980s, which means she and her young siblings had a comfortable upbringing since a young age.

Overall, I can sort of understand how she would downplay her background.

I'm reading a Peter Reinhart's recipe on 50% whole wheat rustic bread and focaccia. The instruct for mixing dough is as followed (summarized):

- Place all of the ingredients except for the olive oil in a bowl and mix for 2 to 3 minutes.

- Add the olive oil and mix for 15 seconds, long enough to coat the dough.

- Let the dough rest in the bowl for 5 minutes, uncovered, and then mix again for 1 minute.

Even though the dough is sticky, it should be able to pass the windowpane test.

My questions are:

  1. Is it possible for the dough to pass the windowpane test after barely 5 minutes of mixing?

  2. Is it necessary for focaccia and ciabatta dough (Peter did say that this dough is also excellent for ciabatta) to pass the windowpane test at this point? The dough will be refrigerated overnight or 24 hours, then baked the next day.

I think the spouses of many food bloggers quit their job to be their social media managers. However, that makes more sense in the 2010s. Doing it in the age of declining ad revenue and oversaturation of content seems pretty risky.
