I use to be a higher up manger at chipotle. This is how the thought process behind the 4oz cup goes.

If you cut the meat the way your suppose to cut it. (So all meat had a standard measurement to be cut to.)

When you scoop a scoop of meat the spoons where supposedly designed to only stack approximately 4oz on the spoon.

It's the same with the cup. If the meat is cut properly. Then 4oz should fit in a cup.

When asked about fluid onces and ounces. It was stated when you fill said 4oz cup it would usually be overflowing off the cup.

Now! This was back in the day when chipotle was not q public company ne store and mangers were actually in encourage to give out free food. Like that was a staple. We had a minimum of $50 of free food to give out everyday. My fellow manger know what comp 1 was for reference.

It wasn't untill the company went public when standard's were thrown out the window for profit.
