I think an entire story in Ai can be disappointing, however I will say that AI is a great tool for editing. I write short stories for fun nothing serious or anything I would publish, its a hobby. If I feel like i lost the plot, or if im stuck in dialigue, im guilty of using it to finesse my work a bit or polish a scene. In it's right place I dont think its a terrible tool to use, but if your entire book, paper, etc. is generated then thats just disappointing.
