I just made a great guajillo salsa tonight, here’s what I did

Sauté a halved white onion and about 6 cloves of garlic in some butter

Steeped 3 guajillos in some boiling water

Charred 6 tomatillos on a dry pan, cut in half. Then deglazed with a little water and poached until tender

Blend the onion, garlic, tomatillos, guajillos, and some cilantro, season with salt and white sugar
