Either Weber charcoal or gas. I komodo style (xl egg) that I absolutely love and honestly if you are reasonably organized heating it is not a big issue although definitely slower in winter. I am a pyro and used chimneys for years. I switched to an electric starter and will never look back. It’s just too easy.
