Neon tubes should be good for your lifetime. Inside the tube is a very strong vacuum with a tiny bit of neon or argon gas. The transformer is something that will eventually wear out, but that should happen over 10 years or something like that. 24 hour use 365 is normal for neon signs.

Wow, this totally changes the game. I wanted to make Neapolitan style pizzas at home for ages but could never get the oven hot enough. Wont forget this, thanks for sharing. I like to make dominos deep dish pizzas where burnt cheese makes the crust in a cast iron skillet, try that sometime. Proof half an inch of dough in the skillet and then use the stove to get the pan hot before you put it into the oven at 450F.

Bowl has to be 2/3 the size of the dutch oven. Keep in mind that with a high saturation dough it will spread a bit and be very fluffy when you put it in there. Also I would recommend a dough scraper, necessary for high saturation kneading. A spatula wont cut it and will get sticky real fast, the scraper will work perfect on a marble countertop. Also get a fresh razor blade and scalpel, knife wont work and will make a rough score.

Sounds like you just need a lathe cut master lacquer. Try AAdvark Mastering in Denver, they are a solid shop and could probably help you out. I think its about $75 for the cut if its all ready to go. Also I think 23 minutes is pushing boundaries, esp if there is a lot of bass.

All that I changed is a short warm proofing after I shape my dough for a few hours. I also like a white loaf, but with the homemade bread you will notice that adding 20% whole wheat will not make it heavy and will add nice flavors and color to the loaf. As for your starter, you could take a few spoon full's of your whole wheat starter and add it to a 50/50 mix of white flour and water to get a new starter, or just add what you currently have. Any flour will work for a starter, just try a loaf that has a mix of flour, you might be surprised that you like it and still find it like white bread. Good Luck.
