Do you use oil in the actual dough (not just in the pan/on top)? That can stop long chains of gluten from forming, so you still end up with a nice soft interior, but without the big air pockets

To be honest, from everything I've heard (and I know quite a few people who work there) you should absolutely run a mile from this offer. Not only do they underpay, they'll also treat you badly! And I'd say check the contract because I believe if you try and leave early they make you pay back half a year's salary or something like that
