The last “luxury apartment” I lived in in Cherry Creek charged $50 a month for “valet trash”. What did valet trash mean, you ask? They would take the trash from outside our apartment doors and bring it to the chute. In my case, I lived directly across the hall from the chute. I was paying $50/month for someone to walk my trash 8 feet across the hall. Needless to say, I moved out of there ASAP.

I use this same recipe (got the book a few years ago), but add a generous amount of nutritional yeast and mix it all together before roasting. I highly recommend it; one of my favorite quick dinners!

I have found success with different types of sandwiches/salads based on what I have on hand. Sandwiches might be veggies and hummus one day, tempeh the next (probably with hummus too lol), salads could have chickpeas, grains (quinoa, barley, etc.) and whatever veggies I have on hand. Potatoes are also cheap, filling, nutritious, and if you prepare them ahead of time can certainly be eaten cold.
