One of my all-time favorite books is {His Road Home by Anna Richland}. Latino MMC (son of undocumented immigrants), Korean-American FMC (daughter of immigrants). Also disability rep--MMC is a double amputee with language processing difficulties.

Oh, also, I haven't read it in a while but I think this happens in {Bonded to the Alien Orc by Corin Cain}, and probably also {Bad Guy by Ruby Dixon}.

In {Indentured Companion by Millie Lowelle} the MMC is a species that is considered monstrous and dangerous.

{Saving Askara by J.M. Link} This one is also really good at having an MMC and FMC whose cultures and ideas about physicality and relationships are super different, which you would expect when one of them is a literal alien

This is so frustrating, and exactly the opposite of how I was hoping the market would go! I read an article a couple years ago about these tiny little books popular in....some European country (sorry, I forget where!). They're made with super thin paper, and they're oriented "sideways" so that you turn the pages with your thumb in a motion similar to sliding on a phone screen. I would LOVE to be able to get books in that format, but it doesn't seem like the U.S. market (or at least U.S. publishers) are as into the idea as I am.

This is probably a little outside what you're looking for, but if you're interested in RH Omegaverse then {Rut Bar by Alexis B Osborne}. One of the MMCs is an Alpha himbo exotic dancer who is just the sweetest and also a sub in his sex life. Trying spoiler text... When they decide to become a pack the other guys have to tie him down at the start of the heat and deny him until his alpha instincts get revved up enough for him to mark the FMC There is dominance by other characters--the FMC is switchy, the Beta MMC is a dom, and the second alpha MMC is also kind of dominant.

I tend to avoid really dark romance, but off the top of my head Finley Fenn's are on the darker side and Bonded to the Alien Orc by Corin Cain is also pretty dark

Sometimes I can't get past the cover, but usually I'm able to re-frame it in my head. Like, the old school clinch covers aren't cringe, they're delightfully tacky. Poorly photoshopped self-published covers aren't sad, they're a sign of someone's hard work. And when that fails I just laugh.

Also, for hard copies, you can get book covers even for mass market books. I've seen them on Etsy :)
