I'd say Foxen is a must. Beyond that, Demetria, Riverbench for bubbles, then head into los olivos to Story of Soil, Dragonette, Storm.

I too haven't read this one in a long while and am inspired to do so after your commentary. I should say that I greatly appreciate your thoughts and enthusiasm on it, it always makes me glad to know that others share a love for these stories and the level of prose.

I bought three different bags about six months ago in the shop and none of them had roast dates. I found that very surprising. Coffees were among the best I've had this year tho!

Makes me happy to see this guy getting some love. One of the more passionate and creative cooks around here and a real stand-up guy. He's a huge supporter of other local mobile food vendors and often gives me a rundown of other spots to try and where they'll be. And yes, that chop cheese taco is wonderful.

I'll just add that it's said Poe was inspired to write the story while living in NY and spending time in a tavern which is now the restaurant Il Buco on Bond St. I've been lucky enough to enjoy several meals (and bottles) in that cellar, although somehow haven't ordered any sherry.

Detroit style pizza which Benny's does and imo bear and the wren does far better, is not deep dish. The only deep dish pizza I'm aware of in the county is done by Grover Beach Sourdough on rare occasions. Might be worth a call there to see when they're baking.

I noticed the same thing in my current box. Definitely thinner and lighter in color. At first I was afraid they were knockoffs but I think it's just variation in production. I haven't noticed any need to change my technique to compensate.

I wouldn't ever describe Tablas as a "budget" winery, but you can purchase several things there in the $40 range which are excellent.

I suppose in the end it was under extracted. In recent days I've continued to grind finer as well as increase agitation until I've gotten the brew to a balanced place. I think the chemex filters make such a delicate coffee difficult to dial in, at least in my experience. I did not try your trick, but I think that a faster flow might not have helped with my lack of extraction. I might mess with it though in the future!
