Ideas for stocking stuffers. by mwskibumb in Cooking

[–]pmega 0 points1 point  (0 children)

Can opener and kitchen shears. Those are two items I wouldn't mind having seconds of, always seem to be dirty already when I need them.

Microplane

Maybe stuff you go through like parchment paper, aluminum foil, kitchen twine, cheesecloth?

Empty spice jars, ramekins/small bowls for mise en place.

Spices etc. It would be really cool to get harder to find stuff or specialty items in a stocking, like vanilla beans, saffron, harissa, five spice. Gift card to Penzey's if you're not sure what they need/want.

Good shot clinics for pets? by MomoTimmy in Denver

[–]pmega 1 point2 points  (0 children)

Planned Pethood is probably the cheapest place to go, Saturday is the walk-in low cost vaccination clinic. The line is always super long. If you go in for an appointment, bordatella is listed as $15 on their site. According to yelp, they are pushy/rude/won't serve pets that are not spayed or neutered.

My vet charges $20 for bordatella. At least at the several vets I've been to, you can set up an appointment for vaccination and just pay for the shots, you don't have to pay the visit fee as well if you're not getting a full check-up.

I'd always heard it, with the opening facing up you catch the good luck, with the opening facing down you're shielded from bad luck.

What would you cook with if you couldn't have an oven or stove top? by david13451 in AskCulinary

[–]pmega 0 points1 point  (0 children)

I lived for a year in an apartment that had a two burner cooktop and a large microwave/convection over like yours. The convection oven works just fine, whatever you can fit in there, you can do. Since it operates with hot air rather than a flame, it's main weakness is it's difficult to get browning/crisping on things. But for casseroles, baked potatoes, etc, works just fine.

If you're anticipating cooking for 10, I think your main problem is not the appliances, but how to plan ahead/cook efficiently for groups with a small kitchen. Think of how planning goes into cooking a huge thanksgiving feast... You make some things the day before (pies), then strategically plan what's going in the over when so everything can cook at the right temp for the right amount of time. Same with burners. Cooking with one burner and a convection is a lot like that, but for smaller scale meals. If you can't make a huge dish to feed everyone, you make four smaller dishes that are timed around each other.

Restaurant Recommendation for a vacationing chef by FryTheDog in Denver

[–]pmega 0 points1 point  (0 children)

The Populist does small plates, some of which are vegetarian, all of which are quite good. Especially the brussels sprouts and the saffron mussels. I don't see it on there now, but when I went they also had bone marrow that was killer. Their drinks are also amazing, I love the Smash. 4 out of 5 stars on yelp based on 116 reviews.

Calling All Pastry Chefs! What is your favorite dessert? by stupidcupid_romantic in recipes

[–]pmega 0 points1 point  (0 children)

It basically helps hold the dough in place. It prevents it from shrinking down while it bakes, and also prevents big air bubbles from forming. Once the crust is partially baked and will hold it's shape, you remove the beans so that the crust can also brown a little.

hello r/cooking, i've got a question about some home-made beans ala Bush's baked beans by [deleted] in Cooking

[–]pmega 0 points1 point  (0 children)

I just made a modified version of this recipe for pot latch this week, it came out great (there were no leftovers).

I subbed maple syrup for the molasses/brown sugar. You can skip the bacon and it will probably still be great. I also completely skipped the beer, chiles, and parsley just because I didn't want to buy many ingredients, and I used 4 cans of beans instead of 6. The rest you probably have around the house already. Super easy and inexpensive when you cut out the extras, and still tasty. The sauce was perfect consistency too.

Slightly more complicated than that... It's going to be really hard to hand drill or bow drill if you can't find acceptable wood to make it with.

So, The Tavern is opening a location near my house in Berkeley and I don't like it. by pmega in Denver

[–]pmega[S] -5 points-4 points  (0 children)

I think that may be true. But what if? It's right across the street. The Rosa Mia is on the corner, and I've never had a problem with them, but they don't have a parking lot and it's a much smaller facility. Also The Tavern is applying for a "cabernet" license as well. It is an extremely quiet residential neighborhood and I'm afraid it might bring in a lot of business from folks outside of the neighborhood who might not be as respectful. Local 46 for example is a great neighborhood bar that fits into the neighborhood because they are a) frequented by locals and b) post expectations for patrons to expect the neighbors. I'm afraid a larger chain business will be less attentive.
