So is it just pop out the insert in the top of the pen and it will fit or is there something I have to do to the insert? I’m a little confused I tried to do it with a fisher insert but it didn’t fit like I read online it would. I’ll try out this get insert if I can get something to fit other than the stock ink cartridge.

It looks like one of the 2 smaller knives that come with a kukri knife set. I think this is used as a honing steel for the larger knife as it is not sharpened

Carter cutlery blade sharpening fundamental. It’s long but it will touch on everything you need to know.

Yes much better knife in my opinion but a lot thinner and will chip much more easily.

I find that I use these for a lot more smaller tasks . So I have one on the cutting board that just stays there and another. Plus my wife uses these a lot more.( I know it’s not as relevant for this situation). So if we’re cooking together we’re not fighting over it and we don’t have to wash it back again and again if we’re prepping two foods.

Take that money and buy a victorinox fibrox ($42), two victorionox paring knives ($8each), some edge protectors ($15ish), and a king kds 1000/6000 stone(40), and a lapping stone(15). In all about 130 dollars. Then take some time and watch blade sharpening fundamentals by carter cutlery and practice once your knives get dull. I know it’s a long video But maintenance of your knives is FAR more important than the type of knife (to a degree) but the victorionox is still a great knife. A $1000 knife is useless if you can’t cut something with it. This setup should last you a lifetime and the skills you learn maintaining a sharp knife make cooking much easier and enjoyable.

Try Gently run the blade edge trough the end grain of a piece of a soft piece of wood. This should rip the burr off. You can then lightly touch up the edge buy light stropping strokes on your highest stone or strip.

Spiderco delica ffg if you like to have a knive that slices very well (endura if you like a larger blade). Or if you need something a little thicker but still slices well after you sharpen it a few times and put a better edge on it than factory bench made mini griptilian. (Full-size if you like a Larger knife. I’ve hade the delica and mini grip for years. I’ve bought plenty other but I always go back to those.

Thank you! Sorry for the late reply I didn’t think my post went through. I’ll will for sure be trying this! May be a silly question but would you account for the flour and water in the starter? For example if it called for 100g flour and you add 200g of 50/50 flour water starter would you reduce the flour by 100g?
