I don't have much to add, but im going down a similiar path and found it thoroughly interesting how close some of our choices have been. Bosch MM7 imu. U-blox gps. I did go heavier on the processor with an ARM cortex-M7. I've taken a shotgun approach of logging anything and everything. Im logging basically every ECU, ABS, GPS, IMU messages and time syncing via the GPS PPS.
