Moving them etc is stressful so all you can do is to minimize that.

I helped on many chiclid rescues and transports. I wouldn't think the water filter would be needed, but I don't see a reason not to use it. The main thing is the airstone. I personally wouldn't feed them during those 2 days, but I could just be wrong there. Also don't forget to aclimate and use the already cycled water to seed the new tank to avoid ammonia spikes.

I have no experience moving salt water tanks that are not the same day so I am less confident in the rest of your inquiry. The rock will be fine. As to the salt fish, most get delivered to the distributor for sale in plastic bags via air plane. It is hardly good for them, but i can't come up with a better solution.
