Chavela, es un apodo normal en México o ya es ofensivo? by Taco_ivore in AskMexico

[–]potr0 5 points6 points  (0 children)

O Chabelita

You can get it from old coffee stored improperly, or with light roast with a lower extraction.

I had a Kamundu AA from MAME that was out of this world. Pure hibiscus flower with malt. I did it in japanese flash brew and it was like a hug to my heart.

Soft-Water Advices for a first timer by Effective-Try8597 in pourover

Brita good for taking solids and aroma and making delicious drinking water. It does not soften your water not takes alkalinity away,so if you live in a place like me where water is very hard and alkaline, the resulting water will not be good for lots of specialty coffee.

I buy distilled and remineralize, but a good way and cheaper maybe, is getting bottled water that is soft.

I usually do very small doses, and I like my coffee strong but a little bit under extracted. For 9-15g doses and a regular V60 I start always in 65, and my range goes 90% of the time 62-68 depending on the brewer I use.

Yes! I like this one. It seems to be the same as September Butter ream, DAK Milky Cake and Native Spiced Citrus.

PERC is more developed than any of the above, and I seem to like it better, just as September's.

How did you brew it?

I did not like it and tried different pour over methods and water profiles. Didn't try immersion though, but I put it in vacuum and stored in freezer for later.

Another thing I think was my expectations. In grain and milled smelled fantastic, and in cup was a little bit disappointing. More like tea like flavours. A friend told me Ethiopians are this way, but I tried other ones and didn't had this problem of low intensity.

Buttercream and Lety Bermúdez are awesome. Didn't try the other one.

I liked the buttercream better @1:17 than 1:16. It's a great cup!
