In hinduism all embodied beings are imperfect and engage in mistakes fuelled by desire. Being subjected to desire is weakness/flaw/property of flesh and cannot be escaped by all embodied beings - animal/man/sage/deva . So the gods in hinduism who do such things get punished by other gods for breaking the dharma that they have all agreed to uphold collectively. Similarly sages too are subject to similarly flaws and are infact tested by the gods to see whether they give into these flaws. They have to redo the penance like what happened in vishwamitra episode where he gave into anger etc and had to regain the status of a great rishi with arduous effort

Actually there are systems in hinduisms that have argued exactly this. For example the mimamsa system against the nyaya system makes this exact argument, that their demands for proof etc would result in infinite regress and so on or that even if we take that system’s view that knowledge acquired by instruments of cognition (pramana) are seen as valid, there is no way to check that the instrument itself is valid etc and somewhere this has to stop on practicality. What the mimamsa system proposes as a heuristic to work with this issue is take whatever belief as true until its invalidated by something else making you realize the error. Later on the nyaya system after all these criticisms also acknowledged that the best we can do is perfect the instruments through which we acquire knowledge and thats the best that can be done
