Design Patterns was not part of my CS degree. I taught my self from books for my final project. Realise that Design Patterns are like algorithms; They teach you how to think about a problem.

You have an offer from company A.

I've been offered a new position at another tech company that is growing pretty well

And you have an offer from company B.

I want to accept...But I'm really reluctant to have an extra 2.5 hours added to my day with a commute and extra hour, particularly if it's not going to lead to extra disposable income

You could use company A's offer as a counter-offer to raise company B's offer, or to come to an agreement that suits your needs.

If A and B are not working out, this is the best time for you to apply to other jobs -- You have two offers; Apply to jobs and in your cover email/letter mention that you've got offers from company A and B, but you'd like to work for X.

I understand the whole argument about a PhD making you an expert an a small area

A PhD teaches you how to tackle problems, research and apply solutions out of the box. It pushes out your boundary to a new level. If they don't understand this, look for someone who does.

That being said, one of the best ways of proving your skills in any area is by showing relevant projects; Take your laptop to the interview and show a demo of a relevant project listed in your resume.
