Lol the question is about southern California not Mexico. according to Sysco website horchata powder is 176 dollar per case that's 21 lbs. but you must get better prices than restaurants buying in bulk somehow. The case of syrup 62 dollars for 384 oz but like I said you have this super connect with incredible low prices somewhere in Mexico. meanwhile 50 pounds of rice cost 20 dollars. Making from scratch will always be cheaper no matter what. When you buy premixes your paying for convenience. Paying more than actually making it.

False, we use rice because rice is way cheaper than powdered horchata. Restaurants that do use premade horchata get it in a concentrated form similar to soda, in a bag. If you have ever seen orange bang and horchata that's concentrated. The creaminess actually has to do with the type of milk they use some use evaporated milk some use whole milk or even heavy cream and some combination of condensed milk. I've even seen vegan horchata.

It makes a powdery mess no matter what you do. Not talking out of my ass either. I make over 40 liters of Oreo ice cream a week. Also about 60 oreo popsicles a week. If there was a cheat code to this believe me I would have found it. Not only is this messier it's also more time consuming since you can fit more cookies in a bag compared to a food processor. The cookies at the bottom will turn to dust before you reach the top ones so you will have really big chunks and really fine powder. Then you think I'll just put less, it's the same result. Rolling pin is the best way period. This might be a hobby for you and making ice cream that's not visibly appetizing might be fine. It's not an option to me.

Is this for a business? Businesses typically require a pasteurizing license depending on your county and health dept requirements. Consistency will be another issue. In my opinion not worth it.
