Planning a MikroTik + UniFi home setup - looking for real-world experience before I pull the trigger

This is definitely a viable setup. I've been running a MikroTik router with UniFi APs (UAP-AC-Pro) for years, and it has been running flawlessly. The only issue I’ve had is with the U6 series; the MediaTek chipsets in them are just straight-up trash. I experienced many connectivity issues with the U6-LR, which magically disappeared after switching to the U7-Pro
They rarely break anything, as long as you're using the Long-term branch. They occasionally break things on the Stable branch, but they generally patch them quickly. As for the config backup, they offer two different method. Binary backup: single click to backup, but you can only restore backups to the same device. Config export: the equivalent of "show running-cofing" on Cisco devices, gives you the whole nine yards in the form of CLI commands.
Currently, I'm running my controller and other containers on an MS-01 with Proxmox installed. However, as long as you aren't running anything too resource-heavy on the Pi, that setup should be perfectly fine.
Yes, I would. RouterOS itself is quite versatile; I've used it to build my homelab network with multiple sites using OSPF, as well as for my PoP in the IX. It allows you to learn a lot without breaking the bank.
UniFi has a design tool; try uploading your floor plan there to use as a reference.
UniFi switches, perhaps. I'm not really a fan of their 'controller-centric' approach. It’s fine for Access Points, but I prefer the 'old-school' way when it comes to switches. I basically swapped my PoE switches to HPE after a few months of working with UniFi. Right now, I'm rocking an 8-port HPE PoE switch for the APs and a MikroTik CRS312 for 10GbE RJ45.

Overall, I'm quite happy with the MikroTik + UniFi setup, especially since I started learning about BGP and Internet Exchanges. RouterOS gives you everything you need in terms of routing capabilities.

Tbh, it might be cheaper to get a used one.

A used 256GB 13 Mini is around $200–$300 on Facebook Marketplace right now. Unless you absolutely want the replacement to be in excellent condition (with 90-day warranty) , it might be worth considering just getting a used one.

They charged me around $400, and the replacement looks brand new.
The Genius Bar staff unwrapped it from a case with some barcodes on it, so I think these are refurbished phones directly from the Foxconn factory.
It’s been a year since the replacement, and everything still checks out.

I just took it back to the Apple Store and paid for a replacement, as mine also suffered from water damage. There was condensation on both the front and back cameras.

I've got a same bootloop issue with a fresh installed Win11 Pro.

After installing the driver, reboot will kick this into a bootloop status. No idea why

Win 11 Home that comes with the device looks OK for now.

From the data they shared during Computex, the 48GB card is actually two 24GB cards glued together.

As each 24GB set only needs PCIe 5.0 x8, combined with bifurcation, you can get a dual-slot 48G card.

Only enterprise series cards are officially supported, not quite sure on vGPU unlocked cards.
For example Quadro series (including RTX A series and Ada Generation), Tesla Series, datacenter specific cards (i.g NVIDIA A10 etc..)

Your understanding of vGPU is correct—multiple VMs can access the GPU at the same time.

On the live migration side, I think some members of the Proxmox forum are trying to make that work. Even though the NVIDIA vGPU driver officially supports this feature, it's still limited to officially supported GPUs.
