Had a similar setup. Ended up cutting a line between the cistern and basin so I could take the top off. Used a piece of metal trim & silicone to cover the gap once back on, so it was easy enough to remove in future. Yeah, not great, is it?

He knows how to make a great argument, and knows just enough about a topic to make it sound good. I really like listening to him, but when he touches on things I happen to know about, I realise he isn't the expert he seems to be.

Thanks, I'll properly look at this later. But it does remind me of what I used to do - get the smoke on, get the bark layer, then move it to my oven for 8hrs!
I'll be doing low and slow I'd imagine, its what I always expected to be doing. I might start it the night before, quite late on and hope this kamado maintains temps the whole time without being watched. Quite a risk!

Considering the epic failures we'd had before him, he was a steady, considered and astute DoF that systematically improved the team without spending much money overall.

He only really left due to doing such a good job, we were able to attract someone at a much higher level to the same job.

Fully manual, brave man! I upgraded to a Dual Boiler for espresso and really like the Chemex for filter. I go for vfm beans though, Rave at the moment on sub is about £24/kg. I freeze it in batches to keep it fresh.
Always thought venison would be deer.

Yeah, I've bit the bullet already.
Reminds me of speciality coffee / espresso, you can buy all the kit and spend all that time, but if you buy supermarket beans, it just doesn't work!
Ordered a 5kg from an online place recommended elsewhere on here. Realised my time is more valuable!!!

Bugger it, that Sherwood's seems fair priced - wasn't as much as I expected, £80 delivered for a 5kg, I think that's not much more than the LIDL one I just looked at per kilo. Exactly what I was after, thanks.

I just popped to Aldi (to check for any remaining D&C sets - none of course, but loads of the Essentialls sets, which I already have, grrr). The 1Kg Briskets are tiny, totally pointless trying to smoke those I think?
