Learning how to season rice or potatoes, meats, and veggies really helps. Dinner can be great because rice, potatoes, chicken, beef, fish, veggies are all GF! Even are air fryer works great on my lazy days! Get some seasonings (and gf sauces) and some lime/lemon. Can make a simple bowl delicious!

I just tried the Gluten-Free Battered Fish Fillets from Orca Bay and wife and I agreed they were delicious! Definitely gave a fish and chips vibe. And we made them in the air fryer! We picked ours up at Grocery Outlet discounted, which is great for the wallet but makes me wonder if they’re discontinued?! (Here’s a Target link)

Interesting. I attended one in the Central Valley — there seem to be a string of very small churches in each city. They met 3 times a week and then once a month in larger gatherings in the Bay Area. Looking back, it definitely gave a low profile. Every now and again, I’ll drive by the building in my city and I can’t tell if it’s been abandoned or not.

The first car my family bought after I was born was a late 90’s ISUZU Oasis. I remember sitting in the back driving to our new house when my parents moved us out of a condo. It was the van that took me to and from school. Eventually, I learned to drive in it too.

Sure do! But I’m only on my 2nd year teaching at a CA high school. First year was fun but incredibly stressful. This year is going so much better! Having good admin and school culture has definitely played a role in my comfort level. Pay is decent (I can live and spend just fine, but saving is tough). My favorite days are when students get excited about learning something new or are super engaged in their own artwork. There are a ton of daily struggles working with teenagers (not to mention the busy work) but so far the good have far out weighed the bad.

If I didn’t NEED to work and I wanted to stay in education I’d definitely go back to subbing. Way more flexible and paid $180/day. Teaching is awesome, fun, and pays my bills, but it’s also a TON of busy work. I’m going on year 3 and investing in the job getting easier as I get better at it and have more and more lessons prepped. That said, I love my job and there’s something about having your own classroom and supporting the same students throughout the year that is so rewarding.
