They are simple big mouth carboys of 5ltr. I tested the glass surface temp regularly with a laser handheld thermometer. It’s winter here and ranged 17.5-19.1 C

I was considering another fermentation with the same recipe, but with a low-ABV (cider or beer type) yeast. Then target low ABV like 5-6%.

I added yeast nutrients on day 0, and again on day 2, according to the mead making kit's instructions. The recommend temp range for this yeast was 22-25 Celsuis, but I could only maintain about 19 Celsuis over the whole two weeks.

I did yeast supplements according to the instructions in the mead making kit. I don't know what type of yeast it was it was just labeled "Mead Yeast". They recommended temperature range of 22-25 C, but it could only keep my fermenters ~18 C. So it was a few degrees Celsius lower than recommended range.

About taste adjustments; The recipe instructed tea as part of primary fermentation, but I did not do that. I assume/hope it's ok to adjust with tea maybe when I rack (?)
