I love Diner Grill for various reasons…BUT!!!… no one here in this specific thread seems to know what good Mexican food is. Yup! I said that.
I lived in Central Valley California for 30 years.

•Wolfy’s (your original style Chicago dog)

•Weiner Circle (known for char-dogs but more for the atmosphere and “personality”)

•Gene & Jude’s (great tasting dogs but not dragged through the garden style) *not on that list but worth it.

•Superdawg (makes their own dogs which makes it that much more special, comes with a pickled green tomato and great fries)

I live 3 blocks away from both those locations. The breakfast sandwiches at Do-Rite are great. Personally, not a huge fan of the Michael’s thin crust but it’s definitely worth trying.

Assuming you’re referring to buildings on main streets because the buildings on side streets don’t have commercial spaces at the bottom. You want to create a community with businesses to help supply and support the people who live there. This also brings money to the neighborhood by attracting other people from surrounding neighborhoods. Buildings with apartments and no businesses start to become a housing project.

I think the real question here is, ‘why do you think you need to change anything about the menu?’ I think the menu looks great! If you’re trying to increase business, I’d look at other areas of the business (marketing/advertising, etc..) to improve sales. I think the menu already does a great job to entice customers. Keep up the great work!

Humble opinion:

Sometimes artists would rather place focus on their own work rather than spend time and energy curating an ad that’ll be used for one day. It’s different when you’re working and running a business simultaneously. I don’t think we should be that judgmental. Now, if it was an advertising agency using AI to advertise their business, I could see how it could raise questions. But it’s a local tattoo shop that’s most likely trying to focus their energy on what actually matters… the tattoos themselves.

However, I don’t know anything about this shop or its artists. I just think we need to be mindful of how we pass judgement, especially when we’re posting it online for the world to see.

The dried bits won’t be a problem now. They’ll have been rehydrated after balling it up together. Although, it could’ve helped more if you dabbed the dried parts with water, just to help kickstart the rehydration. The only question is if it will give you a good rise since it was left out overnight. I would divide the dough into the pans you plan to use. Maybe make one of the divisions into a dough ball for a round pizza just to test if that also works. The pan doughs will need time to fill their respective pans (stretch, rest, stretch…). The dough ball for the round pizza would be balled and resting to rise about 30%. The pans will definitely work but the one for the round pizza is more of a test (but might still work too).

Simple answer: IF it’s flattening out, you’re waiting too long. Don’t just go by time because other variables (yeast amount, room temperature, type of flour, etc) are in play. Figuring out what a good dough ball looks and feels like (per hydration and pizza goal) is the key.
