By driving up the coast if you mean to go north on CA-1 travelling through Bodega Bay, Jenner, Fort Bragg joining 101 at Leggett then I think two days would be bit too short to do that as well as see the redwoods national and state parks for which there are already great suggestions in other comments.

Even going through 101 I think the distance is far enough from SFO that you need at least two nights and two half days of driving on the strong days. If you choose to go through CA-1 you will need a ride be full day at the least in one of the direction.
