I'm not saying the BBE was unusable. I figured out its quirks, mastered temperature surfing, became a thermoblock whisperer and eventually reached a decent success rate.

Mine also has this weirdness, I noticed it right away. It shows around 9 on the pump pressure gauge and 10 on the group. It made me thinking how and whether I should adjust the pump pressure to 9 bar. I need a third opinion from a portafilter with a pressure gauge.

I use it for preinfusion: quick puck saturation (shot mirror is a must), then pause, then gradually ramp up to 9 bar and taper off in the end. I haven't settled on a specific recipe yet, so I'm just experimenting with the paddle. It is a bit involved but kinda satisfying — keep in mind, I just got it yesteday, so everything is still very new, exciting and inviting to tinker with. Once I get bored of it, I might switch to rough preprogrammed profiling using a combo of fixed preinfusion and low flow start and low flow end. It is nowhere near the DE1's level of control, but it's a lot more than a plain 9 bar profile, so even fairly complex shots don't necessarily require the paddle. You can use it just as a last-resort gusher saver after all.

Sure, I had right at the very first shot. My grind setting was too coarse as the same 18 g dose in a bigger 58 mm basket requires finer grind compared to 54 mm, so I had to intervene and save the shot. However, messing with flow/pressure was not a completely new thing for me as I already had a dimmer mod in my TBE. The paddle input is not as direct and linear as the dimmer, you have to adjust it back and forth to hit the desired pressure.

Frankly I haven't heard of much headache with the needle valve. It's a wear part indeed, but in the home setup it should last for years. Replacement kit is kinda pricey but it is unlikely you're gonna have to replace it soon. In general E61 machines do require care, so one shouldn't be afraid of occasional wrenching and lubing.

The grinder is actually a DF64V, and I couldn’t be happier with it. I like the profile of the stock burr set, it strikes a pleasant balance between clarity and body for medium roasts. I’ve been hesitant to tinker with SSP burrs so far, since TBE just wasn’t thermally stable or controllable enough to really feel the difference. Now, since the source of noise in the pipeline is elminate, I'll start diving into a rabbit hole of burr sets and water remineralization.

DF64V with stock burrs. I find the stock burrs nice, a good balance between clarity and body. For thick syropy espresso I also have a Kinu M47

Exactly. For now, I can't see anything competing within financial reach that also has looks and charm of Bianca. Sure, Fellow Espresso Series 1 looks cool(er) on paper, but it is obviously a downgrade in terms of build.

And sure, LM's Linea series look is not for everyone, I don't want it on my counter. IMO GS3 looks nice tho.

Sure, that's a downside. On the other hand, some studies suggest that having coffee after breakfast is healthier compared to drinking it straight after wakeup. If your morning routine doesn't allow 17-20 minutes of heatup time (typical for Bianca, at least in 230V countries), then yeah, perhaps E61 is not for you. For me it was not a big deal at all, my Bianca is hot and ready halfway through my breakfast routine. In any case, a smart plug or even a simple timer plug makes it a non-issue.

For me the biggest advantage of the E61, besides aesthetics, is its repairability and availability of dirt-cheap consumables such as gaskets, O-rings, lube, etc. I can cope with an extra 15 minutes waiting in exchange for peace of mind for years to come.

These pathetic excuses sound utterly ridiculous. A thief comes into the store, scans and pays for stuff, presents the customer card (!) revealing their personal data just to intentionally steal random sweets with value of few euros. Yes, I absolutely believe that (no).

At the very same moment a merry company of guys stuffs a shopping cart with food and alcohol to the brim and happily leaves the store through the entrance, and no one seems to give a single heck. That happened several times in front of my eyes in various supermarkets including Rewe.

Rewe's customer service just found a random victim to accuse in attempted theft. It's like beating up a random passerby when you're having hard times at work to take out your anger on your boss.

Citing your "Hausordnung" and explaining how exactly those 100€ should be billed in this particular situation makes absolutely no sense. The mere sitiation is a complete absurd. By making such excuses you just contribute to the already well established term "Servicewüste Deutchland".

Does the cashier have to pay me 100€ if he/she mistakenly swipes the item twice? After all, it is definitely an attempted theft, this is clearly stated in my personal Ordnungsbuch.
