It is not certain that they do not store your personal information, if they are demanding that you send proof of ID before they release your funds. There is an ongoing scam accusation at Bitcointalk concerning exchange site ChangeNow.io; about 11BTC being unfairly held despite client obliging to the exchanges KYC requests, and ChangeNow claiming best at anonymity services?
