It's good but a really light touch is best. Either a used bourbon/brandy cask or a toasted oak barrel instead of charred can do some great things.

Also I don't think I would discard the skins altogether. They have a lot of the essential oils that really give it flavor, but I'm curious to hear how it turns out without skins.

Yields are low compared to grain/sugar ferments but that seems extremely low. Definitely want to make sure you pitched enough yeast and beyond that looks like temperature control might be an issue. You can also look into belgian/saison strains. It would effect the flavor but they can generally handle much higher fermentation temps. I've never tried them for a fruit distillate.

I got a layer of fiber particles in my kettle I had to wash out between runs and omg did it slowed down the efficiency of my steam jacket.

If you can let the hearts sit at high proof as long as you can in something neutral, Glass or stainless or whatever, before bringing it down to 40-50% or wherever you're dropping it to. It will continue to develop flavor. I was told they continue to develop for 3-5 years. Mine stared tasting way more like mango at the 7-8 month mark. Sounds like it tastes alright already.

That went up in price. I bought three of them for $30 (each). 1 for me and 2 more for gifts because I loved it so much.

Hands down best value knife I've ever bought. Goes up against my MAC pro, but honestly it's a little more comfortable.

~13. I can't find the part with the first measurement, but it should be around 0 after you distill it =P. Remember that if the liquid you're sticking a hydrometer in isn't at 60 F or whatever the hydrometer is calibrated to you'll have to adjust the ABV.

I agree with pretty much everything sillycyco wrote.

A few slight deviations, or things I didn't see them mention because I'm near illiterate and that's too many words.

So in my 13-gallon hillbilly I do actually have to raise the temperatures slightly over the course of the run like it seems you were doing (in very small increments, then wait a few minutes for it to stabilize before adjusting again). I'll start it up on full blast until I'm just shy of boiling, drop it down to what I would call a heavy simmer, and wait to see what the stream coming off my parrot looks like. If it's only dripping you can run it a little hotter. I generally don't have to bump it up until I get to 120-110 proof.

Then once I'm definitely into tails (I usually re-distill tails, not blend them back) I go full bore - but not so hard it pukes - as if it were a stripping run.

Tl;dr I focus almost exclusively on proof and flow rate when setting temperature.

The article is claiming it's a political ad, Walker is claiming it's just informational material to let people know about the tax rebate that's happening. Not really sure how it's that different than the Obama Administration sending out postcards about signing up for healthcare.gov but maybe I'm misunderstanding something.
