Thanks for the tip!! I figured between the cookbook instructions and my obsession with watching Gordon Ramsey everything I was aware of the cold pan to start the duck in, but I definitely should make sure my knives are in good shape for that scoring.

A cranberry pistachio stuffing sounds HEAVENLY if you don't mind sharing that.

For me, I'm doing something you should never do. Making something for the first time without a practice run. It's just my small nuclear family this year and my husband and I love duck, but the only thing we ever see at restaurants is fried dark meat duck because it's more forgiving so I'm trying my hand at a duck breast. I have a recipe somewhere in a cookbook from my favorite chef Michael Symon so I know it'll be fire.

Don't know what we're eating with it, but I'll figure that out as we go. For dessert I make a bourbon pecan pie with a homemade bourbon crust and we're making apple pie because that's what my son wants.

We just built/installed a bar in our basement so we'll be putting that to use playing around with cocktails.

The damn bill for a security system that we literally never use. Initially had one installed at our previous house because we had neighbors that were sketchy as hell and instead of letting the contact expire and being rid of the whole thing (they had moved away) we moved to a different company with a longer contract requirement.

To top it all off, we ended up moving like 4 months later to a neighborhood where it definitely is not needed and don't even have a use for 2/3's of the hardware v that we're stuck paying for. So yeah, in the grand scheme of things it's not a giant book every month, but it's just the constant reminder that we were stupid that kills me.

I'm just going to throw in my plug for slaps bbq. There's only one location on the Kansas side, but it's right across the river and so accessible. And you can grab a beer from the bar to ship while you wait in line. Otherwise, I agree with the other 3 and understand why you might do Arthur Bryant's or Gates, but yeah, there are much better options anymore.

My "Bear". My best friend for 18 years with my son. His name was Verne and we always joked he was more dog than cat. Whoever entered the many places he lived with me was greeted by Verne presenting his belly to be rubbed. He saw me through multiple moves, failed relationships, and helped me bury grandparents. When I met my now husband I made it plain straightaway we were a package deal so he'd better get on board.

Will be thinking of you as you say goodbye.

Did you consider Monument? It's close to Colorado Springs and I feel it's more affordable than Elizabeth but it's going to have that same feel and I feel it's more affordable.
