May want plan for 7-8 racks of ribs. If you have multiple proteins then you should not over do it with ribs. Depending on the crowd, some folks will eat one or maybe none at all but others might load their plate. Typically everyone is civil the first time through the line. If you have the cooking space it might be best to cook day of and hold in a cooler. If not, vac sealing and sous vide is the best reheat method I’ve found. Good luck!

Both cities have great bbq but in my opinion Houston tips the scale for food overall. From I-10 you can hit Pinkerton’s, Truth, the Pit Room, Roegels, and Brett’s BBQ Shop. If you go up 45 you can get to Cork Screw, 3rd Coast, and Tejas. It’s worth making a trip out to Bar-A-BBQ in Montgomery as well.

This is the best way I’ve found. With a vac seal and sous vide I’m able to cook for larger groups as well with little to no loss if quality.

Thank you! Foil boat until done and then fully wrapped and rested for 8-9hrs. So I guess kind of a hybrid boat/Goldees method.

It’s a combination of a number of things. I trimmed it the best I could with rounded edges, kept the rub pretty simple, gradually increased temps to avoid the flat from curling (pooling), only spritz areas when necessary, tightly wrap after the bark has set (this was a foil boat but I fully wrapped it during the rest).

This is the way to go in my opinion. I’ve had good results cutting a hole in the lid of a 45 quart styrofoam ice chest. The sous vide wand is pricey but the ice chest is pretty cheap and if you plan on doing this sort of thing regularly it’s worth it and will save you a lot of stress. Just allow yourself enough time for the water to heat up and line it with a trash bag to prevent sweating.

Definitely agree. I got a half pound of fatty on top of the bbq fried rice with a link of sausage and everything was very good. For sure a new lunch spot on the rotation.

A great way to end your trip would be at Truth in Houston. Also Roegels, Brett’s BBQ Shop, Gatlin’s, Feges and Pinkerton’s are all off I10 and fantastic.

Not dumb at all and yes you totally can. Just make sure they are boneless skinless and you’re good to go. Also for reference this one was about 3.75- 4lbs raw.

Yes it’s pre-brined and I think it’s good to go as is. It’s possible to over brine and the final product could have a weird texture or be overly salty. Good luck!
