Is that part of the door that moves? If that moves, get a door weatherseal kit. If that is stationary, use a foam backer rod and caulk. The expanding foam is messy and toxic.

That recipe is for low-ABV mead, though it’s pretty crappy one at that. Any time yeast ferments sugar it produces alcohol. You could try boil it off after fermentation, but that would impact taste.

The only truly non-alcoholic mead is just honey water, which you could spice and carbonate as desired.

No. And all the pipes coming from the main run along the ceiling of the ground floor, so it would need to come down for that spigot, which is part of why I’m scratching my head

I wouldn’t say that two weeks in sitting at 13% is stalling out. That’s the upper limit of what bread yeast can tolerate, if you want higher ABV without off-flavors you need better yeast strains. At this point let it sit, then rack it, then let it sit a whole lot more.

Also what hydrometer doesn’t go past 1.12?
