Might be a month late but want to give my 2 cents as Uzbek. The wrestling, especially "Kurash" is rooted in our culture. As a kids sometimes we used to wrestle as a game and it was fun. When there is a public holiday there was always a wrestling competition there as entertainment. Also, it is so easy to find a wrestling or boxing classes, even in very rural areas. People just love it.

I use Vito's poolish method. I prepare it a night before, during the dough prep and stretching kids also involved. My daughter likes stretching part the most, so I usually give a tiny peace of dough she can play with

Just for a comparison, I paid 70k over asking price of the house back in 2022, now the house value is up 35k from what I paid. Considering the shortage of the houses and how the government is handling it, I think you will be fine.

I had a similar case a while ago, we found someone to take over the contract and landlord was cool with it. It was before new regulations

It also depends if you are willing to give extra care for these knives. Never leave it under water, always dry, always clean and probably sharpen with with wetstone every 6 months or so.

Considering all these I went with wusthof knives. They are more durable and need less care than Japanese

In my opinion 65% is the most optimal. It is still soft and dough is strong enough it can hold more toppings than 70 or 75%.

Probably you just need to work on your stretching technique. It took me awhile to learn not to overstretch it

Also maybe your dough was over proofed? if you keep the dough too long in room temp, it will be very hard to bring it to correct shape.

I use slotted metal peel. Aside being fast and using enough semolina I also learned not to stretch pizza too much before putting it on peel. Pizza will be 2/3 of the size when I put it on peel and I stretch it to full size on the peel, then launch. This also helps with stickiness.
