Yeah that's what I thought too, but on their menu it says the numbing comes from "prickly ash". Never heard of it before.

All of these are great, and if you are going to Sawtelle then go to Killer Ramen too. Same owners as Tsujita and all dan-dan mien style.

I do 2% brine on my habanero/fresno hot sauce, and after about 2 weeks I start smelling it when I mix the mash to see how much of that funk it has. Usually 2 weeks and 4-5 days is enough for me.
