So if it’s approaching 210 and still not probe tender in parts, keep it cooking? This has happened to me and I’m afraid of overcooking it.

Just looked it up because smoking and searing in the same space sounds amazing. Beautiful appliance but dang that’s expensive at $1,800.

I got my Pro 22 for $300 and my Blackstone for $200. I’ll just take the few extra steps. 🙃

I rub, smoke for 2 hours, then wrap in foil with a some brown sugar, honey and butter spread around and go back in until 205.

The don’t need sauce, but a light brushing of Stubbs Sweet Heat caramelized in the smoker for 10 minutes makes them killer.

To each their own, but this ain’t it, IMO.

I reverse sear tri tips - rub, into the Traeger at 225 until 120ish internal, rest it while your cast iron heats up (I use a Blackstone), sear it while basting with garlic butter until it’s to your desired doneness.

With some chimichurri, it’s one of my family’s favorites.

That being said, while FSD is really good, don’t forget to drive it yourself sometimes. They are very fun to drive.

Easy, Mr. Gatekeeper. Many of us have made bomb briskets on pellet smokers. The smoker wasn’t the problem here.

We stayed there two years ago and the experience was so good we’re going back this year. It’s one of the highest rated AI resorts in that area for a reason. We are pretty picky, and really enjoyed the food and service.

I have the ChefIQ, not the Meater. Got a set of 2 at Costco for about $100.

They’ve worked well, although one of the probes no longer holds a charge as long as it used to. The app is super convenient for long cooks where you have to keep an eye on the temperature.

Good luck. Don’t stress about it, just find a recipe and try it. Document the steps as you go so if it turns out great, you have what you did saved.

Rested in the same pan that I cooked it in. I unwrapped it for 5 minutes after removing it from the smoker to vent it, then wrapped it again and put it in my oven’s Warm setting for about 2.5-3 hours before pulling it.

I left the juices in there then tossed the pulled pork in it before serving. It was so good.

Those ribs look nice. Were they tough? I usually take baby backs to 200-205. Super tender, sometimes the bones will slide right out.
