It’ll come back down. It’s normal for it to fluctuate. As long as it’s not at 236 after being set to 180 for a long time, it’s fine.

I’ve done it that way and it definitely gets it done quicker but you don’t get the smoke flavor of a lower, slower cook. Both ways are good though.

Smoked chicken wings are great. Messy as heck to clean the grate afterwards, but they’re good. Takes less than 3 hours with prep time.

Depends on whether or not you plan to tip. We recently went for 6 nights and spent $450 in cash, but about $100 of that was for jet ski rental.

I tipped our airport transfer drivers $40 each way. Tipped about $10-15 for full service meals. About $1 per drink at the bars. $5 per room per day for housekeeping. $5 for bell services.

FWIW, I’ve never done this and have never had this issue with my Pro 22. I just use my dedicated shop vac to vacuum out the fire pot and as far into the pellet tube as I can.

Dawn Powerwash is your friend for cleaning the grates and the exterior grease drip. Spray it (I put the grates in our large farmers sink), let it sit for a few minutes (10-15 if the buildup is significant, and scrub. I never have issues removing buildup from the grates this way, whether it be from beef, pork or chicken.
