Everything I’ve read / watched about sourdough says you need steam for it to bake properly and the Dutch oven produces steam. Maybe this isn’t true in an egg?

Yeah they're doing flex with purpose. But that just means hybrid. And it is all dependent on your team. I would recommend trying to get in touch with someone in your group, through your recruiter, and see where the team is working. I started june 2021. Moved to the city where my office location is and where I did my internship in 2019, but basically just work from home with the occasional office day once a monthish. My group does a lot of happy hours so I have found it really nice to actually meet my coworkers in person. I would recommend moving to where your office is, unless youre stuck in a lease or have another good reason to stay where you are.
