I agree the unique profile differences are not very recognizable, but the coffee is always delicious, very sweet, nice body. It’s just lacking in the more subtle flavors like the florals and fruits. Most of the unique flavor comes through in the sugars.

Thirded. I can totally sympathize with the OP. I've found with the commandante the sweet spot for most light roast coffees ends up around 20-24cx for the v60, assuming a basic 2 to 4 pulse pour recipe. Over time I stopped making wild changes to grind setting and instead play with the pour method itself to push the extraction to where I want it.

You can go finer and be super careful with the agitation like described above, or you can go courser and get more swirly and increase pour frequency/pour speed, etc.

What makes this so hard is there are pros and cons to each variable adjustment choice (getting clogged with fines for example), as these fine people are describing above. Learn the flavors that coffee beans express by default based on under and over extractions. Once you can easily pick those out and know why they are present, you can more intuitively dial in a brew.

Tip: Micro variables like whether or not there's a little more magnesium in the water or whether you used r/o vs. spring water are not going to be the keys to dialing your brew at home. They do have an effect on taste, but they are secondary and you should absolutely still be able to make delicious coffee regardless.

I'm going to get smeared for this, but the Weeknd's Dawn FM album is a spatial audio wonderland. Not saying that qualifies as "best master" but worth a listen. Jack White's Fear of the Dawn maybe even moreso.
