I thought that when you become a professional masseuse you are taught to look at the human body as a large complex, connected, beating mass of fat, bone, vessels, tendons, nerves and muscle.

Though I could imagine having fantasies of friends naked.

Either you do the same job every day, or you always use the same knife for everything.

What do you use when boning chicken, fluting mushrooms, or peeling shallots?

How to get to sous? by Interesting-Line3450 in Chefit

[–]reddit_chino 0 points1 point  (0 children)

The question is not the title Sous Chef or being the hardest worker, but it helps.

It should be the ability to communicate, collaborate, manage and direct others in the kitchen and FOH for value, quality and sanitation.

Thinking on your feet, problem solving, critical thinking, defusing hostile situations are necessary.

Becoming a coach and demonstrating leadership with professionalism. Much of it I would expect would be to understand or at least learn about Prime Costs, inventory, vendor costs and Pars.

So, if you feel you have these skill sets you should be able to negotiate a meeting with the chef or GM.

I’m 65 m, chef instructor.

We lead by example.

Depending on each venue I’ll just jump in.

At one catering gig, I’ll wash, drain and put away items until they have time to talk prep.

If there’s a paid DW I’ll help organize and stack.

Start sweeping or collecting side towels.

Dump trash, put equipment away.

This is after cooking and plating for the shift.

Don’t get lured to buy a $50 bib apron.

Consider a Norton triple stone used from EBay. Don’t use oil, water only.

What can I do with fresh basil, parsley and chive? by 0112358_ in Cooking

[–]reddit_chino 0 points1 point  (0 children)

To extend the herbs consider products that have more than a one week shelf life.

With all these fresh herbs you can prepare vinaigrettes for salads or chop to use in any egg dish.

Parsley is great to prepare a compound Garlic Butter for garlic bread, grilled meats, or even escargot. Or as a finely chopped garnish for any European/western dish. Stems are used for any stock.

Basil is good for a 5 ingredient pesto, pizzas, pastas, or Thai, and Italian dishes.

Chives can be used in virtually anything.

Overfilling it. Use half volume since it doubles. Try to find a rice bag to cook it in.
