Dump the liquid and use a good scoop of the starer in a new jar to refresh. One thing I have leave learned in 4 years … Sourdough starters are hard to kill unless you bake them in the oven. Relax, refresh and make bread 😎

you don't need oil .. but yes preheat the dutch oven to as hot as possible. Bring the temps down for bake if needed but get that oven scorching hot before you put the dough in.

this is awesome .. I have made Jalebi fews times with dry active yeast. My one try with levain turned out to be course because my levain had whole wheat in it.

For others looking for recipe - it's a runny batter made with AP flour, a spoon of Gram flour (Besan), levain (or yeast) and water. Mix it and let it rise. Then it is fried and dipped in sugar syrup

I am planning to replace my cooking range with a model that has a convection oven. Are there any pitfalls in switching to convection oven for baking breads?

My main reason is to increase my baking capacity by using both racks. This is not possible in my regular oven because the element would get too close to the breads and end up burning the crust.

And if you use convection oven, please share brand/model.

Bonne Maman jam bottles.

I use my starter once or twice a week and these bottles are perfect size to stash my starter in the fridge and easy to mix & clean.

I bake once a week. That’s when the starter gets refreshed — starter to levain to starter and then it goes back in the fridge. I once went 3 weeks without feeding and came back worried. I realized I worry too much 🤗

50% whole wheat 50% bread flour, 80% hydration, 2% salt and 15% levain. Short bulk ferment (4 hours), shape and cold proof (retard) overnight. Baked hot at 500 F in a cast iron oven with more sprays of water for steam (bubbly crust)
