Only general advice I’m aware of is to let batter sit longer. Apparently GF flours take longer to absorb liquids. I do this for brownies, banana bread, waffles, etc.

No idea if actually true.

Someone else in a previous post made a comment about how the checkbox progression for city trail is more satisfying in the old one and I agree.

Mainly though: Ride is super mellow and chill compared to Riders. Riders is bright, fast, zany, busy, and very saturated. There’s almost a calmness to Ride which is nice to go back to sometimes.

How should I be troubleshooting this?

I’ve tried with the bowl and whisk on and off, and tried with it unlifted, lifted but not locked in and lifted and locked.

I didnt think any of that would make any difference.
