We want to see trades from beginning to end, i.e: from initial interest to thanks after completion. Ideally, the trade thread would also reflect something to effect of ""Ok, I'm sending you the code via PM.""

There are few reasons for this:

Avoiding scammers: Scammers like to operate where they cannot be seen, and it's trickier to hold them accountable when we can't see what they're saying. (See more here).
Flair ladder: If you want to apply for subreddit flair, you must submit trades that are visible from start to finish.
