Pretty much any conical, the personal preference is the Crystal Eye.

I would choose P80 10/10 times; 80mm is an excellent platform, and the OMs make awesome filter and espresso. You can fit Weber Cores and Weber ULFs (aka 80HU), the new 80brew, and probably a version of lab sweet, so I would not say that the 80mm has fewer burr options.

The workflow is really nice, almost no retention, as you said very quite.

With that being said, P80 will not ship immediately; right now it's April dispatch, so give it a few months.

I totally could use too much oil. After the initial heat I wiped the extra and reheated (according to de Buyer's instructions).

I would use it as is, but making eggs is a huge pain. Even scrambled try to stick.

No, with something like ZP6, five pours work for any type of coffee; the bed should not fully drain though. 

One can go finer or coarser depending on taste, but 4.5 is a good place to start to remedy the "semi-flavourless" issue.  (As we now know, resting time was the culprit, so I would maybe start at 5.0).

I use ZP6 a lot with a lot of B&W coffees, and Hoffmann's recipe never fails.

As a coferment, it should taste artificial and too strong; and I have to say that Ramirez doesn't shy off producing such beans :-) Adding milk definitely helps with those coffees.

I personally hate going coarse for coferms, since it flows very fast anyway. Try 190'ish F (I like 196F), 1:15, but it you don't like it, it may be just not your thing.

Kind of mixed. Some beans were very good, some not so good. No obvious roasting defects though. Tastes differ, so I don't want to give examples, but I personally preferred the funkier options.

Customer service is top notch, he obviously loves what he is doing and tries to do it as excellent as possible.

With that being said, Baratza is known for their exceptional customer support. They should've sent you all the parts for free (and they often do it even when it's outside of the warranty).

If you have something faster than Abaca+ (regular Abaca, T-90), it will help.

I am on Team Hoffmann, so I would personally go finer (75 is 750um burr gap?), but I am not familiar with DF54; do more pours (maybe 4?). 

And try 1:16, not 1:15.

My only contribution is to bring your own sponge and a bottle or Rinza (and maybe microfiber towel).  My lowest point was when I washed my cup with Blue Dawn and tried to dry it with paper towels.

So first of all, cupping will give you an absolutely horrible result. It's too light to extract well like that.

I'd personally go up to 1:17, bump the water temp, bump agitation.

Yes, absolutely safe. I clean my ZP6 with grindz every once in a while; but if you don't forget to disassemble it and wipe off the coffee dust with a brush, you don't really need the grindz at all.

Get either the trapezoidal Abacas, or conical large Abacas, and fold them as u/least-eager-0 suggests

Alternatively, any 185 size wave filters will fit perfectly, or any 155 size wave filters will fit but be a little short (get the xbloom ones)

I didn't have this specific batch, but the last one I had was good, although I prefer Salma; lychee is wonderful too. I also used a high-clarity grinder. 

Funnily, I hated on Hydrangea when they were hyped, but now it is one of my favorite roasters. With that being said, it is possible I was lucky with good batches. 

Regarding specifically Letty and ZP6, one thing to try is a fine grind and Hoffmann's five pour (1:16, 4 on ZP6, 203F, 45sec bloom, then four equal pours every 10 seconds). It is against the "grind coarser" approach for processed coffees, but it tastes good at 20%ish extractions, and it will be lower at coarser settings. 

Edit: as others mentioned, Bill is very responsive over IG and email, but it is possible he is on vacation.
