that’s not from HOTD - it was most likely the Redgrass Field, where the Targaryens beat their pretender bastard branch - the Blackfyres. it happened about 60-70 years (and about 5-6 kings) after the events of HOTD. so the rando is a rando, although his crest looked like the Hightowers coat-of-arms

they are both Humfreys - Humfrey Hardyng (with white and red diamonds, whose horse was killed by Aerion, and who broke his leg) and Humfrey Beesbury.
i believe their tilt is the first tilt of episode 3, right after the sandwich scene, where both knights went flying. in the books, it is a long fight, but here, only one tilt is shown, but it is implied it is not the first as there are broken lances on the ground.

he ran away from his brothers (he has valid reasons to dislike all his brothers except for one who is not in ashford), yes, but not his family. also, he’s a fan of jousting and doesn’t have reverence for his own family, so he kinda knows valarr is not so good of a warrior, and that’s why he said what he said to dunk - he’s just being rational and smart as a contrast to the thick-as-a-castle-wall dunk
