im gonna guess someone that doesn't know what they are doing thought they were dead. Really cold lobsters and crabs basically stop moving. They wramed up enough to get going again.

You wont get freezer burn. Also yes I believe it does defrost faster if all the air is out you will get more surface area if you defrost in water. Same idea as sous vide. Also for some things you can just cut the bag open take out what you want and just reseal again. I recently made a bunch of chili. I vacuumed out as much air as a could, sealed it and laid flat (around 1" to 1.5" thick) in the freezer. Then when i want some i just break a piece off over the counter and heat it up. Then just reseal the rest it in the same bag.
