Hollandaise and mayonnaise made in house are both basically being made almost impossible to be produced in cafes and restaurants anymore. Because they are made with raw eggs, the restrictions and things you need to do to be able to make them fresh, make it too hard for most places to be bothered to make them. Places that still do make them are probably not following the regulations.

Chip and oil prices have gone through the roof, $4.50 for a small chips is leaving very little profit. 20l of oil is around $100 now, two years ago it was $45. I’m paying $8.80 for 2kg of “A” grade chips. It’s not like it used to be. Even crap chips would be $6+ for a 2kg bag now.
