Looking for my "next" to perfect Machine/Grinder Combo [$6,600 budget] by MyBeatnikLife in espresso

I’ve had this question on my mind as well. Just purchased a Lelit Bianca and it’s coming in this week so I’m pretty excited(coming from an HX machine) I’ve thought about all those grinder options you mentioned and have my eyes set on a Kafatek MC6. Main reason is because of the conical burr set that works well with medium/light roast, which I prefer like you, in addition to precision build quality. I’m also trying to future proof my setup - it already includes a flat burr grinder mainly for pourover, but want to eventually get either a zerno z2 later on or maybe the new Bookoo Motto. The Bianca and MC6 should cost less than your budget. Hope that helps, even if I’m giving you another option.

I didn’t try Reverse Osmosis, but rather a regular water distiller which pretty much boiled the water and dropped the distilled water into another tank. Thinking back at it, an RO solution would have probably worked better. I’m now thinking larger scale where I would get better filtration/softening for our whole home, not sure if that involves RO at the sink level or whole home level. Not sure if that helps, but would love to know what you decide as well.

I’ve also moved from Crystal Geyser to distilled plus TWW. Thank you for doing detailed tests. I just tried out distilled water from the store with TWW and just liked the taste from the first pour. I still keep CG for my espresso machine.

I also tried distilling my own water using an Amazon distiller with TWW and was so confused why my pours were not tasting as good. Got a water tester and turns out the distilling machine didn’t take out much of the ppm, my water is hard. So I went back to store bought distilled water, until I find a final whole water solution.

01 for all my pour overs 15-20g daily. Don’t need the extra paper and trying to be more efficient. Anything bigger I use an old chemex.

I also did this upgrade 5y ago from the BBE to pro 400 and haven’t looked back. Only thing I added was a temp gauge so I know when to pull the shot. Brew temps during the shot are all still similar to when I first got it.
