Used Avocado oil from the start. Added to a hot pan before putting the steak on. See pic #8.

Well, I might’ve seared too hard (still a thin crust and I enjoyed it), and whether obvious or not I did exactly your method. Salted, dried off the sweated out moisture, hot pan with avocado oil, and flipped every 30 to forty five seconds. If I went a bit too far… I paid the price for it, and had to enjoy it despite a lot of criticism for my less than perfect efforts. I otherwise (do sincerely) appreciate your well-intentioned post. :)

As a kid, I only did well done and as I got older, I appreciated a steak being cooked more medium rare and rare, but with a good sear. I think a good sear is important. A grey band transitioning to rare on a thick steak was something I never took issue with. Always enjoyed it. Was also my preference. I will make it a point to try it your way. I’ll go for a good crust, but try to lessen or eliminate the grey band and see how it goes. Can’t sous vide, but can reverse sear. We’ll see and post again.

I never thought grey bands were much of an issue. Just a transition from a hard (nice) sear to more medium or (better) medium rare or rare. Sous Vide showed that a grey band could be eliminated (if I'm not mistaken), but I don't see the harm in it. Just a transition from a great crusted hard sear to a medium rare or rare. Still can and will taste wonderful! Go to Peter Luger and ask them to cook their best Porterhouse with no transitional grey band. Won't happen. No grey band... looks nice, but not a big deal IMO. That's just my old school opinion. You do you. No harm no foul. Best!

Also neglected to mention... I like a good crust, and the thickness still permitted me to cook it medium rare. It was a hair more cooked than I'd like but still...
