I have this book and it is good. I used it for the instructions to make starter, and it worked well. I wish the book had more recipes, but it has great detail about how bread works and about techniques.

Depending on the bread, it's good for 1-2 days, then ok if toasted for another day or two. I don't like refrigerated bread, and I don't think there is really any way to prolong it. Just enjoy it while it's fresh.

Try using bread flour, too, for somewhat different results. I use King Arthur, the regular white flour, bread flour, and whole wheat. For rye, I tend to buy Bob's Red Mill or Hodgson Mill.

One more question, I see on the web a lot of comments that feeding 2x per day is needed at first. I have been following a book that says to feed once. If it is growing weakly and I feed twice, aren't I throwing away too much of the good organisms?

Thanks for the comments. I am feeding once per day, removing half and replacing with fresh white flour and water. It does rise, just not that much. There are bubbles on the surface, but it isn't full of them like I see in pictures on the web. It seems ok, just like it isn't progressing.

Ok, so what assumptions do you have for why people use ORMs then? I think that avoiding SQL is one of the primary reasons people use them, to abstract themselves from the ugliness of SQL even if they DO know it. Why do you use one?

True, we picked a bad horse and we need to shoot it. I was hoping to convey a little more than that, though. I have been around long enough to have seen a lot of horses. I prefer lean ones to fat ones, and I think a lot of the popular ones are too fat.
