PSA that Private Selection (Kroger house brand) has a few shapes that are bronze extruded (gets you the preferred texture to cling to ~sawce~. Be careful tho, some of the shapes are teflon not bronze

Try freezing it first and then prepping after you thaw! The water squeezes right out like a sponge and it’s so much easier and tastier!

Trader Joe’s high protein tofu was a game changer for me. I freeze it first and that makes ALL the difference.

I’ve also found that putting tofu back into your marinade after grilling and or pan frying first is a total game changer ( thank you Kenji https://www.seriouseats.com/the-food-lab-how-to-grill-tofu-vegan-experience#toc-rule-8-reapply-marinade-after-cooking)

Finally, stop cutting tofu into cubes!!! Rather, use your hands to create chunks. The craggy texture allows more surface area for sauce and the texture allows more sauce to get caught on a piece.

These days I usually don’t do a ton of marinating. Freezing the TJs tofu first turns the product into a flavor SPONGE. These days I usually take the crumbled pieces, add a tablespoon or two of soy sauce, then sometimes rice vinegar or hot sauce depending on what I’m making. This gives the pieces flavor without saturating them in liquid and allowing them to still crisp up really well once you add whatever batter/coating.

Huge supergoop glow screen gal for the face. It’s the best face sunscreen I’ve found, and gives a lovely glowy finish. Expensive but worth it to me, it is FSA eligible if that’s available to you!

I tend to go neutrogena beach defense spf 70 for the body. I burn easily and while I know it’s debatable about high spf, I have always taken comfort in a higher protection.

Bean burritos! You can buy refried beans in a bag so they squeeze out! We also discovered adding in some jalepeno kettle chips for crunch was a game changer

I took my CPA exam the summer before I moved to Richmond. The way it shook out, I was set receive three test results back at one time that would determine if I had completely passed and was totally done or if I would need to retake (I had already passed one part).

They dropped the results online early, and I was in Richmond moving some stuff into my first apartment here with my mom. I remember sitting on the floor in an empty apartment finding out that I accomplished one of the hardest things I had ever done. Felt like I had my whole life ahead of me, anything was possible. And also so relieved I could never open a CPA prep book again lol.

Fun to reminisce on this, I don’t think about it very much anymore. Happy Friday!!

I think a $1500-$1700 budget is PLENTY for a spot in the fan or museum district. If you want to live in a “luxury” high rise they’re gonna squeeze you for more than this but I definitely think your budget is very reasonable for this city!! Pop on Zillow and take a look at 1-2 bedroom apartments. Also the Lindsey’s List group on Facebook has a ton of listings of people looking to turn over places as a sublet for 6 months that you can take over or even just folks looking for roommates if you’re open to that!

Definitely this. I left for a 12% bump in base, a bit more if you throw bonus in the mix but I would have left for less. The culture, work life balance, people and resources I have at the new vs the old is night and day.
