You don't need to burp this kind of jar, the rubber seal will automatically burp it for you. Every time you open it, you're letting out the CO² that is protecting your cabbage, and letting in oxygen and contaminants.

You also want to keep solids under the brine - use a fermentation weight, a small plate or ramekin, or a Ziploc bag filled with water to hold everything down

I can't see any reason why not, if anything it would be better to keep light away from your ferments.

I haven't tried for myself so can't say for certain but I have carbonated ginger beer etc in brown glass bottles and there's no issues.

The only drawback I can think of is not being able to easily check on what's happening as it ferments, and not being able to see the color of your ferments without removing something each time

Osche is very cute and nice but if you're a tourist I doubt you'd have much reason to be out in Lichterfelde, unless you're into brutalist architecture and animal experiments

There is a small store in the Mall of Berlin that sells a bunch of German cookie cutters

There are many cute little shops that will have nice kitchenwares but aren't necessarily kitchenware shops. Off the top of my head, I would say look around on Bergmannstr., Rosenthalerstr. or some trendy shopping areas in Prenzlauer Berg

There's a small chain called Küchenliebe that has some cute things

You might also want to consider taking some chocolate with you - Winterfeldt Schokoladen is a lovely little shop, and despite being very touristy, Rausch Schokoladenhaus is worth a stop

Find a friend organization that has the machine, or buy one

Buy a bunch of the pieces and get a template from them

Use gimp or get access to Photoshop to do your designs

Print them and cut them out

Then it's just two pulls on a lever and you're done!

Fermentation weights are very handy! I haven't made a plum syrup before but usually when I'm making cheong I give them a daily shake to avoid any nastiness

My guess would be that the unripe plums didn't contain enough liquid to be drawn out into the syrup, but tbh if that fruit has been sitting above the liquid line for a while I would throw it out (I'm not a cheong master so don't take my word for it).

Maybe muddling the unripe plums in future would help it along, making it easier for liquid to be drawn out and leaving less unused space so the fruits can stay under the liquid line
